This is my favorite chili recipe. I found it on Pinterest a couple years ago and it has been my go to since.
The first time I ever made it I followed this recipe to a T. Since then, I’ve modified it for me. Venison Chili – it was delicious. We ate it for days!
Now when I made it I just cook it on the stove. It is quick and easy and you can modify the spice amount to your taste (cumin and cayenne)
I substituted carrots and yellow pepper for corn as well.
* 1 lb . cubed venison or 1 lb. ground beef
* 1 small onion , diced
* 1 can of corn
* 1 tsp . minced garlic
* 1 (28 oz) can of Rotel diced tomatoes with green chilies
* 1 (14 oz.) cans tomato sauce
* 2 Tbsp . cumin
* 2 Tbsp . chili powder
* 1 tsp . salt
* 1/2 tsp . cayenne pepper
* 1 (14 oz.) can kidney beans, drained and rinsed
* 1 (14 oz) can black beans, drained and rinsed
In a frying pan, brown venison or beef with a tablespoon of olive oil. Once cooked and slightly drained add onion and garlic until onions have become transparent. Once onions have become transparent, add spices and continue to cook for one minute. Transfer your browned meat and remaining ingredients into an medium to large pot. Cook on medium heat for about 30-45 minutes then put on low.
